- In the past, I have made this recipe with Italian and Mediterranean seasoning blends. This time, I used Sazon seasoning. No matter which seasoning blend I have tried, the vegetables turn out delicious.
- You can use between 1 and 2 teaspoons of your favorite herb blend, depending on how strong of flavor you like.
- You can try this recipe with other vegetables, such as cauliflower.
- Store leftovers in an airtight container in the refrigerator and reheat in the oven, for maximum crispiness.
Here's how to make it:
- Spread the vegetables in a single layer onto a baking pan or a high-sided baking sheet that's been sprayed with cooking spray.
- Drizzle the olive oil over the vegetables, evenly distributing it. Sprinkle the seasonings over the vegetables.
- Toss the vegetables in the pan, coating them in the oil and herbs, then ensure they're in an even layer again.
- Roast the vegetables at 400 degrees F for 10 minutes. Remove the pan from the oven and toss the vegetables to ensure even coating and cooking.
- Put the pan back into the oven and roast for 10 additional minutes or until crispy.
- Garnish with shredded Parmesan, if desired, and serve.
